Diples (Greek Pastry) Recipe
Greek Diples are thin, folded dough sheets, fried until golden and typically served with a honey syrup, walnuts, and cinnamon.

Instructions

Sift flour and baking powder into a bowl.

Beat egg yolks and one whole egg for 4-5 minutes until thick and light yellow.

Add melted butter, orange juice, and brandy to the egg mixture while mixing.

Gradually add the sifted flour until a non-sticky dough forms, then knead for 5-8 minutes until smooth and elastic.

Divide the dough into four pieces, cover, and let rest for 30 minutes.

Roll each dough piece to 1/16-inch thickness, then cut into 5x10-inch sheets; separate them with waxed paper.

Heat 3 inches of oil in a wide, deep pan until shimmering.

Fry individual dough sheets by rolling them with two forks until light golden; drain on paper towels.

Prepare the syrup by gently heating honey and water.

Drizzle diples with the syrup and sprinkle with ground walnuts and cinnamon just before serving.
