Dill Potatoes Grilled in a Packet

Instructions

  1. Preheat the grill to medium heat.

  2. Wash and quarter the potatoes, then place them in a resealable container.

  3. Combine olive oil, minced garlic, chopped dill, melted butter, salt, and black pepper in a small bowl.

  4. Pour the mixture over the potatoes, seal, and marinate for 30 minutes.

  5. Transfer the marinated potatoes, along with some marinade, onto a long sheet of aluminum foil using a slotted spoon.

  6. Cover with another foil sheet, crimp the edges to form a packet, and poke three small holes in the top.

  7. Grill the packet for 30 to 40 minutes, or until the potatoes are tender.

  8. Remove the packet from the grill, let it rest for 5 minutes, then carefully open it to serve the potatoes.
