Instructions

  1. Simmer 2 inches of water in a saucepan over medium heat.

  2. In a glass bowl, whisk egg yolks, cold water, and a few drops of lemon juice until frothy.

  3. Set the bowl over the simmering water, ensuring it doesn't touch, and whisk eggs for 2 minutes until slightly thickened.

  4. Remove the bowl from heat and slowly drizzle in clarified butter while continuously whisking; gradually increase speed as the sauce thickens.

  5. Once butter is incorporated, whisk in remaining lemon juice, cayenne pepper to taste, and Dijon mustard, then serve immediately.
