Devil’s Food Snacking Cake with Marshmallow Frosting

Preheat the oven to 350 F and prepare an 8-inch square cake pan by greasing and lining with parchment paper.

In a liquid measuring cup, whisk water, cocoa powder, and optional espresso powder; set aside.

In a large bowl, whisk mayonnaise, granulated sugar, and vanilla for 30 seconds, then whisk in the egg.

Add baking powder, baking soda, and salt to the bowl, whisking vigorously after each addition.

Whisk in half of the flour, then the cocoa mixture, and finally the remaining flour until combined.

Pour the batter into the prepared pan and bake for 25 to 30 minutes, rotating halfway, until a skewer inserted in the center comes out with moist crumbs.

Let the cake cool in the pan for 20 minutes, then remove it using the parchment overhang and cool completely to room temperature.

For the frosting, beat butter, marshmallow creme, vanilla, and salt on medium speed until fluffy (1-2 minutes).

Beat in confectioners' sugar, then increase speed to medium-high and beat for 2 to 3 minutes until light and fluffy.

Generously frost the cooled cake, sprinkle with sparkling sugar, then slice and serve.
