Delicious Rowan Berry Jelly
A seasonal rowan berry jelly that complements bread, roasted lamb, and various cheeses.

Instructions

Combine rowan berries and apples in a large nonreactive pan, then barely cover them with cold water.

Bring to a boil over medium heat, then reduce to low and simmer for 20 minutes until the fruit is soft.

Allow the mixture to cool for 5 minutes, then strain it through a jelly bag over a bowl for at least 12 hours without squeezing.

Measure the collected juice and the required sugar, then combine them in a clean non-reactive pan.

Simmer over low heat for 10 minutes until the sugar dissolves.

Increase heat to a full rolling boil for 5 minutes, then test for the setting point.

Once set, pour into hot, sterilized jars, then seal and label them.
