Instructions

  1. Place a 6 to 8 pound Boston butt pork roast into the slow cooker, trimming to fit if necessary.

  2. Add 1/4 cup liquid (water, beer, or apple juice) and season the pork with kosher salt, black pepper, and optional cayenne pepper.

  3. Cover and cook on low for 7 to 9 hours until tender.

  4. Remove meat, drain excess liquid, then shred the pork with two forks, discarding fat and bone.

  5. Return shredded pork to the slow cooker, add about 1 cup of barbecue sauce, toss to coat, and cook on low for an additional 1 to 2 hours.

  6. Serve the barbecued pork with extra sauce on the side.
