Deep-Fried Tofu

Instructions

Heat 2 inches of oil in a wok or deep pan to 350 F.

Cut pressed tofu into triangles or 1-inch cubes.

Roll the tofu in cornstarch, tapping off any excess.

Carefully fry two tofu pieces at a time, stirring, until golden on both sides.

Remove fried tofu with a slotted spoon, drain on a wire rack, and sprinkle with salt if desired.

Continue frying remaining tofu in batches, maintaining oil temperature.
