Instructions

  1. Heat 2 inches of oil in a wok or deep pan to 350 F.

  2. Cut pressed tofu into triangles or 1-inch cubes.

  3. Roll the tofu in cornstarch, tapping off any excess.

  4. Carefully fry two tofu pieces at a time, stirring, until golden on both sides.

  5. Remove fried tofu with a slotted spoon, drain on a wire rack, and sprinkle with salt if desired.

  6. Continue frying remaining tofu in batches, maintaining oil temperature.

  7. Serve immediately.
