Deep-Fried Sweet Potato Chips
Sweet potato chips are prepared by deep frying thinly sliced sweet potatoes until golden brown and then salting them for a delightful snack.

Instructions

Heat oil for deep frying to 355-365 F in a deep fryer or skillet, ensuring it's no more than half full.

Peel sweet potatoes, halve them lengthwise, and slice very thinly with a mandoline or food processor.

Place the sliced sweet potatoes in a bowl, cover with cold water, and let them soak for one hour.

Drain sweet potato slices thoroughly on paper towels before frying.

Fry the slices in single-layer batches for 1-2 minutes until they are golden brown.

Remove fried chips with a slotted spoon, letting excess oil drain, then transfer them to a paper towel-lined bowl or pan to drain thoroughly.

Repeat the frying process for all remaining slices, then allow the chips to cool completely.

Sprinkle the cooled chips with salt before serving.
