Deep-Fried Sweet Potato Chips

Instructions

  1. Heat oil for deep frying to 355-365 F in a deep fryer or skillet, ensuring it's no more than half full.

  2. Peel sweet potatoes, halve them lengthwise, and slice very thinly with a mandoline or food processor.

  3. Place the sliced sweet potatoes in a bowl, cover with cold water, and let them soak for one hour.

  4. Drain sweet potato slices thoroughly on paper towels before frying.

  5. Fry the slices in single-layer batches for 1-2 minutes until they are golden brown.

  6. Remove fried chips with a slotted spoon, letting excess oil drain, then transfer them to a paper towel-lined bowl or pan to drain thoroughly.

  7. Repeat the frying process for all remaining slices, then allow the chips to cool completely.

  8. Sprinkle the cooled chips with salt before serving.
