Deep-Fried Southern Hush Puppies

Instructions

  1. Heat 2 to 3 inches of oil in a deep fryer or skillet to 370 F.

  2. Combine self-rising cornmeal mix, self-rising flour, onion, milk, and egg in a mixing bowl and mix well.

  3. Let the batter rest at room temperature for 5 minutes.

  4. Drop batter by tablespoons into the hot oil without overcrowding, frying in small batches until deep golden brown and evenly turned (allow 2-3 minutes per batch, yielding about 3 batches).

  5. Drain on paper towels.
