Deep-Fried Southern Hush Puppies
Golden-brown hush puppies are made simply with self-rising cornmeal, flour, and green onions for added flavor.

Heat 2 to 3 inches of oil in a deep fryer or skillet to 370 F.

Combine self-rising cornmeal mix, self-rising flour, onion, milk, and egg in a mixing bowl and mix well.

Let the batter rest at room temperature for 5 minutes.

Drop batter by tablespoons into the hot oil without overcrowding, frying in small batches until deep golden brown and evenly turned (allow 2-3 minutes per batch, yielding about 3 batches).

Drain on paper towels.
