Deep-Fried Prime Rib Roast

Instructions

Determine the amount of oil needed by placing the roast in the frying pot, covering it with 3 inches of water, removing the roast, measuring the water, then drying the pot and roast thoroughly.

The night before, season the prime rib with a mixture of salt, pepper, and rosemary, then cover and refrigerate.

Bring the roast to room temperature for 1 to 1.5 hours before frying.

Heat the measured peanut oil to 360 F.

Carefully lower the prime rib into the hot oil; adjust heat to maintain an oil temperature of 350 F.

Fry for 3 minutes per pound for medium-rare or 4 minutes per pound for medium doneness.

Remove the roast, drain on paper towels, tent with foil, and rest for at least 20 minutes before carving.
