Deep-Fried Potato Skins With Dips and Toppings

Preheat the oven to 400 F. Prick potatoes with a fork and bake for approximately 1 hour until tender.

Allow the potatoes to cool slightly, then slice them in half lengthwise and carefully scoop out the flesh, reserving it for another use and leaving the skins intact.

Cut each potato skin half into two pieces, resulting in four skins per potato.

Heat oil in a deep fryer to 375 F.

Deep-fry the potato skins in batches for 2 to 3 minutes until they are browned and crisp.

Transfer the fried skins to paper towels to drain, then sprinkle with salt and pepper, and serve with sour cream and chives, or top with cheese and broil until melted, then add crumbled bacon.
