Deep-Fried Egg Rolls

Homemade egg rolls feature a savory filling of shredded cabbage, meat or shrimp, and green onions, seasoned with soy sauce.

Instructions

  1. Heat 2 inches of peanut oil in a deep fryer or deep pan to 370 F.

  2. In a wok or skillet, combine cabbage and green onions with peanut oil. Stir-fry over high heat for 3 minutes until the cabbage is limp.

  3. Incorporate soy sauce, brown sugar, and chopped meat or shrimp; continue stir-frying for 1 minute until the vegetables are cooked.

  4. Allow the prepared mixture to cool.

  5. Fill egg roll wrappers according to package instructions.

  6. Fry a few egg rolls at a time in the preheated oil for 1 to 2 minutes until golden brown.

  7. Using a slotted spoon, remove fried egg rolls and drain them on paper towels.
