Deep-Fried Chiles Rellenos

Instructions

  1. Preheat a deep fryer to 375 F with oil.

  2. Drain chiles, make a slit, and remove seeds and membrane.

  3. Cut cheese into sticks 1 inch shorter than chiles, 0.5 inch thick and wide.

  4. Stuff chiles with cheese, press to seal, then thoroughly coat each chile in 1/2 cup flour.

  5. Place floured chiles on a waxed paper-lined sheet and chill for one hour.

  6. Beat egg whites until stiff. In a separate bowl, combine egg yolks, water, 3 tablespoons flour, and salt until smooth. Fold egg whites into the yolk mixture to create batter.

  7. Dip each chile in batter. Slide chiles from a saucer into the hot oil. Fry for 4 minutes until puffed and golden.
