Date Turnover Cookies
Filled date cookies, baked as small turnovers with a nut-enhanced date filling, are optionally drizzled with a vanilla glaze.

Instructions

Preheat the oven to 400°F and line baking sheets with parchment paper.

Combine sugar, shortening, eggs, and vanilla; beat until light, then stir in flour, salt, and baking soda to form a soft dough and refrigerate for at least one hour.

In a saucepan, cook the date filling ingredients, stirring constantly, until thickened, then cool completely.

Roll the chilled dough thinly on a floured surface and cut into 3-inch rounds or squares.

Spoon about 1 teaspoon of date filling onto one side of each dough piece, moisten the edges, then fold the dough over the filling and pinch to seal.

Place cookies 1 inch apart on baking sheets, brush with milk, and sprinkle with sugar.

Bake for 8 to 10 minutes until lightly browned, then immediately remove from baking sheets.

For the optional glaze, beat confectioners' sugar, 1 tablespoon soft butter, a dash of salt, 1/4 teaspoon vanilla extract, and 2 tablespoons milk until smooth, adding more milk for a drizzling consistency.

Transfer the glaze to a small plastic bag, snip a corner, and squeeze over the cooled turnovers.
