Date Squares With Oat Crust

Instructions

  1. Preheat the oven to 375 F and lightly butter a 13x9x2-inch baking pan.

  2. In a medium saucepan, combine dates, 1/3 cup sugar, water, and vanilla. Bring to a boil, then reduce heat and simmer for 10 to 12 minutes, stirring frequently.

  3. Remove the date mixture from heat and cool for 5 to 10 minutes.

  4. Cream butter and brown sugar until light and fluffy.

  5. Combine flour, salt, and baking soda. Add this dry mixture to the creamed butter and sugar, then mix in the oats.

  6. Press about half of the oat mixture (approximately 2.5 cups or 13 ounces) into the prepared baking pan.

  7. Spread the date filling evenly over the bottom crust. Sprinkle the remaining oat mixture on top and lightly tamp down.

  8. Bake for 25 to 30 minutes at 375 F, or until browned.

  9. Cut into bars while warm, then let cool completely before removing from the pan.
