Date Cream Pie
A stovetop-prepared date pie offers an excellent alternative to a traditional raisin pie, featuring a tender date filling in a baked shell.

Quarter dates, place in a saucepan, cover with water, and bring to a boil; then reduce heat and simmer until tender.

In a bowl, combine milk, sugar, salt, and flour; stir this into the dates, then add the beaten egg.

Cook the date mixture, stirring constantly, until thickened; remove from heat and cool completely.

For the whipped cream, beat whipping cream until soft peaks form; then beat in confectioners' sugar and vanilla until stiff.

Pour the cooled filling into a baked pastry shell; once firm, top with the prepared whipped cream.
