Instructions

  1. Preheat the oven to 350 F and line baking sheets with parchment paper.

  2. Combine flour, baking soda, and salt in a bowl.

  3. In a separate large bowl, beat butter and sugar until fluffy, then mix in eggs one at a time, followed by vanilla.

  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined, then fold in dates and pecans.

  5. Chill the dough for 1 hour.

  6. Drop rounded tablespoons of dough onto the prepared baking sheets, ensuring 2 inches of space between each.

  7. Bake for 10 to 14 minutes, or until edges are lightly browned.

  8. Cool cookies in the pan for 5 minutes before transferring to a wire rack to cool completely.
