Date and Walnut Steamed Pudding
A classic British steamed sponge pudding features sweet dates and crunchy walnuts for a delightful dessert.

Instructions

Start boiling water in a large saucepan for steaming.

Grease a 1 ½ pint (750 milliliters) pudding basin with butter.

Combine flour, salt, suet, dates, walnuts, lemon rind, and sugar.

Add milk to the mixture to create a dropping consistency, then stir well.

Place the batter into the prepared pudding basin and smooth the surface.

Cover the basin with two circles of greaseproof paper, secured with kitchen string.

Put the covered pudding in a steamer over rapidly boiling water.

Cover the steamer tightly with a lid or foil and steam for 1 ½ to 2 hours, adding more boiling water as necessary.

Remove the pudding from the steamer, discard the paper, and let it stand for 10 minutes before serving, ideally with hot custard.
