Instructions

  1. Add 2 tablespoons whipping cream and chocolate to a metal bowl, then place it over a saucepan with simmering water, ensuring the water does not touch the bowl.

  2. Gently heat and stir the mixture until the chocolate is melted and smooth.

  3. Remove the bowl from the heat, let cool slightly, then stir in the egg yolk until combined; place the bowl back over the hot water (heat off) to keep warm.

  4. Whip the remaining whipping cream until soft peaks form.

  5. Fold half of the chocolate mixture into the whipped cream, then fold in the rest of the chocolate mixture and the creamy liqueur if desired, being careful not to overmix.

  6. Beat the egg white until soft peaks form, then gently fold it into the chocolate mousse mixture.

  7. Spoon the mousse into serving glasses, cover, and refrigerate for 2 hours.

  8. Serve with chocolate shavings or fresh raspberries.
