Preheat oven to 350 F with 3 racks positioned upper, middle, and lower; line 3 cookie sheets with parchment or silicone mats.

Cream butter and sugar in a large bowl, then mix in egg and salt.

Whisk all-purpose flour, almond flour, and vanilla sugar in a separate bowl, then gradually add to the butter mixture and mix until combined.

Spoon dough into a piping bag with a large star tip, pipe 2-inch circles onto prepared sheets, then refrigerate for at least 40 minutes.

Bake cookies for 16 to 18 minutes, rotating sheets halfway through, until edges are light golden.
