Instructions

  1. Preheat oven to 350 F with 3 racks positioned upper, middle, and lower; line 3 cookie sheets with parchment or silicone mats.

  2. Cream butter and sugar in a large bowl, then mix in egg and salt.

  3. Whisk all-purpose flour, almond flour, and vanilla sugar in a separate bowl, then gradually add to the butter mixture and mix until combined.

  4. Spoon dough into a piping bag with a large star tip, pipe 2-inch circles onto prepared sheets, then refrigerate for at least 40 minutes.

  5. Bake cookies for 16 to 18 minutes, rotating sheets halfway through, until edges are light golden.

  6. Cool on a wire rack.
