Dandelion Honey Recipe: Sweet and Simple Floral Syrup

Instructions

  1. Soak 4 cups dandelion petals in cold water for 5 minutes, then drain.

  2. In a heavy saucepan, combine the drained petals, 4 cups water, 3 quarter-inch lemon slices, and 1/2 split vanilla bean.

  3. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.

  4. Remove from heat and steep for 6 hours.

  5. Strain the liquid through cheesecloth, discarding solids.

  6. Return the strained liquid to a clean heavy saucepan and bring to a low boil.

  7. Gradually add 2 1/2 cups sugar, stirring until fully dissolved.

  8. Reduce heat and simmer uncovered until a syrupy consistency is achieved, about 1 hour. The syrup will thicken more as it cools.
