Dandelion Greens With Garlic

A simple side dish of dandelion greens prepared with sautéed onion, garlic, and chile pepper, finished with Parmesan cheese.

Instructions

  1. Start boiling 1.5 cups of salted water. While it heats, prepare the dandelion greens by discarding roots, rinsing thoroughly, soaking in salted water for 10 minutes, rinsing again, and cutting into 2-inch pieces.

  2. Cook the prepared greens in the boiling water uncovered for 10 minutes.

  3. Simultaneously, heat vegetable oil in a skillet and sauté garlic, onions, and chile pepper until the onion is translucent.

  4. Drain the cooked greens thoroughly, then add them to the onion-garlic mixture and season with salt and pepper.

  5. Plate the greens and top with shaved or grated Parmesan cheese.
