Dairy-Free Vegan Whoopie Pies

Preheat the oven to 400 F and line two baking sheets with parchment paper.

Whisk almond milk and apple cider vinegar; let sit for 5 minutes until curdled.

Sift flour, cocoa powder, baking soda, baking powder, and salt together.

Beat soy margarine and sugar until fluffy (3-4 minutes). Mix in the curdled milk, then gradually add dry ingredients until smooth.

Scoop batter onto prepared sheets, leaving 2 inches between cakes.

Bake for 10-12 minutes until cakes spring back. Transfer to a cooling rack; cool completely.

For the filling, cream soy margarine, cream cheese, and confectioners' sugar (3-4 minutes). Mix in soy yogurt until smooth.

Spread filling generously on half of the cooled cakes (flat-side up), then top with remaining cakes.
