Dairy-Free Vegan Vanilla Frozen Yogurt

Instructions

Blend soy yogurt, agave nectar, ground cashews, and vanilla extract until smooth; then add xanthan gum and blend for 30-60 seconds more until completely smooth.

Pour the mixture into a shallow metal pan and freeze for 1 hour.

Remove the pan from the freezer, blend the partially frozen mixture until smooth, then return it to the pan. Repeat this blending and 1-hour freezing process once more.

After the final blending, freeze for 30-60 minutes before serving.

Store in an airtight container in the freezer.
