Instructions

  1. Dissolve cornstarch in cold water and set aside.

  2. In a saucepan, combine sugar, cocoa powder, and salt; gradually add almond milk over medium-low heat, stirring constantly until smooth.

  3. Heat the mixture until a thin film forms and steam rises, but do not boil.

  4. Remove from heat, add chocolate chips, allow to sit for 3 minutes, then stir until melted.

  5. Stir in the dissolved cornstarch mixture and vanilla, then return the pan to medium-low heat.

  6. Cook, stirring constantly, until the pudding thickens.

  7. Transfer to individual dishes, cover the surface directly with plastic wrap, and chill for at least 2 hours.
