Instructions

Line a large baking sheet with wax paper.

Combine oil, margarine, and popcorn kernels in a 4-5 quart stock pot over high heat, shaking frequently.

Cover the pot once the first kernel pops, continuing to shake until kernels fill the pot.

Transfer the popped corn to a large bowl and toss with salt.

In a separate large saucepan over medium-high heat, combine sugars, corn syrup, and water, mixing until dissolved.

Boil the mixture, unstirred, for 8-10 minutes until light amber, occasionally washing down the pot sides.

Remove from heat, then stir in dairy-free margarine and vanilla.

Sprinkle baking soda over the mixture and stir to distribute.

Immediately pour the hot caramel over the popcorn and stir quickly to coat.

Spread the coated popcorn onto the prepared sheet to cool completely.
