Preheat the oven to 450°F and prepare a large ungreased baking sheet.

Whisk dairy-free milk and lemon juice in a small bowl; let stand 3-5 minutes to thicken.

Place pancake and baking mix in a large bowl, create a well, and pour the milk mixture into it.

Quickly combine ingredients until a soft dough forms.

Turn dough onto a floured surface and shape into a 1-2 inch thick rectangle.

Cut into 8-12 squares with a floured knife; arrange 2 inches apart on the baking sheet.

Bake for approximately 10 minutes, or until golden brown.
