Instructions

  1. Whisk sugar and salt in a saucepan; separately, dissolve cornstarch in 2 tablespoons of almond milk.

  2. Add the cornstarch mixture, remaining almond milk, and egg yolks to the saucepan; whisk until combined.

  3. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.

  4. Reduce heat to low and cook for an additional minute while whisking.

  5. Strain the pudding into a heatproof dish and stir in the vanilla extract.

  6. Cover the pudding surface directly with plastic wrap to prevent a skin, then chill for at least 2 hours before serving.
