Instructions

  1. Start boiling water in a 4-quart pot with sweet potatoes; simmer for 20-30 minutes until tender.

  2. Drain the potatoes, beat until smooth, and allow them to cool.

  3. Preheat oven to 350 F and prepare pie crusts in pie plates, crimping the edges.

  4. Mix soy milk, sugar, eggs, and vanilla, then add this to the cooled potatoes.

  5. In a separate bowl, combine flour, cinnamon, and salt, then mix into the potato mixture until smooth.

  6. Evenly divide the sweet potato mixture among the prepared pie crusts and level the tops.

  7. Bake for 45 to 50 minutes, or until a knife inserted into the center comes out clean.
