Dairy-Free Sweet Potato Pie (Pareve)

Start boiling water in a 4-quart pot with sweet potatoes; simmer for 20-30 minutes until tender.

Drain the potatoes, beat until smooth, and allow them to cool.

Preheat oven to 350 F and prepare pie crusts in pie plates, crimping the edges.

Mix soy milk, sugar, eggs, and vanilla, then add this to the cooled potatoes.

In a separate bowl, combine flour, cinnamon, and salt, then mix into the potato mixture until smooth.

Evenly divide the sweet potato mixture among the prepared pie crusts and level the tops.
