Preheat the oven to 350 F and line two baking sheets with parchment paper.

Whisk together flour, baking powder, baking soda, and salt in a bowl; set aside.

Beat vegan butter and both sugars in a mixer for about 2 minutes until light and fluffy.

Incorporate the egg and vanilla into the butter mixture, beating for 30 seconds and scraping down sides as needed.

Gradually add the flour mixture in 1/2-cup increments to the batter, beating just until combined after each addition, until all dry ingredients are incorporated; the dough will be sticky.

Scoop approximately 1 1/2 tablespoons of dough per cookie onto the prepared baking sheets, arranging about 12 per sheet.

Bake for 10 to 11 minutes, until edges and bottoms show slight golden browning.

Cool cookies on the baking sheets for 2 minutes, then transfer to a wire rack.
