Instructions

  1. Heat olive oil or dairy-free margarine in a large frying pan, then add potatoes and cook until crisp and golden.

  2. Stir in green pepper and onions, cooking until soft; remove the pan from heat.

  3. In a small bowl, whisk eggs and soy milk until well-beaten.

  4. Return the pan to medium heat, pour the egg mixture over the vegetables, and cook until the underside browns and the surface solidifies.

  5. Spoon several tablespoons of salsa onto the eggs.

  6. Once set, loosen the omelet's edges, fold one side over to form a crescent, and press to seal.

  7. Cook for one minute, then flip and cook the other side for an additional minute.

  8. Transfer to a serving plate and serve immediately with salt, pepper, and extra salsa to taste.
