Dairy-Free Queso Dip

Instructions

  1. Combine soymilk and vinegar; let sit 3-5 minutes until thickened.

  2. Stir in cornstarch until dissolved.

  3. Finely grind cashews in a blender.

  4. In a saucepan, combine water, lemon juice, nutritional yeast, spices, and tahini over medium heat.

  5. Stir in the ground cashews and the soymilk mixture until blended.

  6. Mix in salsa and salt; cook to desired consistency, noting it thickens as it cools.

  7. Serve warm, at room temperature, or cold with tortilla or pita chips, or use as a sauce for tacos, quesadillas, or burritos.
