Combine oats, flour, brown sugar, powdered sugar, baking soda, and salt in a large bowl.

In a separate bowl, whisk canola oil, eggs, lemon juice, and vanilla extract until combined.

Add the wet ingredients to the dry mixture, stirring until just combined.

Fold in the dark dairy-free chocolate chips.

Drop spoonfuls of dough onto the prepared sheet, spacing cookies 2 inches apart.
