Dairy-Free Mango Pudding
An easy-to-make, Asian-inspired mango pudding that sets quickly in the refrigerator.

Instructions

Start boiling water in a saucepan.

Puree mango flesh in a food processor until smooth.

Remove boiling water from heat, then whisk in gelatin until dissolved.

Stir sugar into the hot gelatin mixture until dissolved.

Add the gelatin-sugar mixture and coconut milk to the pureed mango; blend briefly to combine.

Pour the pudding into dessert bowls and refrigerate for at least 2 hours.
