Dairy-Free Mango Pudding

An easy-to-make, Asian-inspired mango pudding that sets quickly in the refrigerator.

Instructions

  1. Start boiling water in a saucepan.

  2. Puree mango flesh in a food processor until smooth.

  3. Remove boiling water from heat, then whisk in gelatin until dissolved.

  4. Stir sugar into the hot gelatin mixture until dissolved.

  5. Add the gelatin-sugar mixture and coconut milk to the pureed mango; blend briefly to combine.

  6. Pour the pudding into dessert bowls and refrigerate for at least 2 hours.

  7. Serve chilled.
