Dairy-Free Crustless Keto Spinach Quiche
A simple and healthier dairy-free, crustless spinach quiche is prepared by baking an egg and spinach mixture with plant-based cheese.

Preheat the oven to 350 F.

Whisk eggs in a large bowl until pale yellow.

Add black pepper, salt, garlic powder, and soy milk; whisk until well combined.

Crumble over half of the dairy-free cheese into the bottom of a 9-inch pie plate.

Crumble the remaining dairy-free cheese into the egg mixture, then add spinach and mix until evenly distributed.

Pour the mixture into the pie plate.

Bake for 25 to 35 minutes, or until golden brown and the center is slightly risen but not jiggly.
