Instructions

  1. Start boiling several cups of water in a saucepan.

  2. Steam spinach over the boiling water for 3 minutes, then place it in a bowl and cover to keep warm.

  3. In a separate small saucepan, heat oil, then whisk in flour for 2 minutes until smooth.

  4. Gradually add soymilk and onions, simmer for 4 to 5 minutes, then season with salt and pepper.

  5. In a food processor or blender, pulse the steamed spinach with the cream sauce until creamy, retaining some visible bits of spinach and onion.

  6. Serve as a side dish or with pasta or rice as an entree.
