Instructions

  1. Preheat the oven to 350 F and line 2 large baking sheets with parchment paper.

  2. In a large bowl, combine coconut, sugar, and salt.

  3. Stir in egg whites and vanilla extract until well combined.

  4. Form 1 1/2 to 2 tablespoon mounds and place them on the prepared baking sheets.

  5. Bake for 12 to 15 minutes until peaks are light golden brown, rotating pans halfway through.

  6. Cool cookies completely on a wire rack before serving.
