Dairy-Free Chocolate Mousse (Parve)

A rich, dairy-free chocolate mousse parve, perfect as a kosher dessert for any occasion, including Shabbat.

Instructions

  1. Start boiling water.

  2. Dissolve coffee grounds in boiling water.

  3. Melt chocolate and margarine in a double boiler over medium-low heat, then stir in the coffee mixture as they melt.

  4. Meanwhile, whisk egg whites until stiff.

  5. Remove melted chocolate mixture from heat, add egg yolks and liquor (if using), and mix thoroughly.

  6. Gently fold the chocolate mixture into the stiff egg whites.

  7. Transfer the mixture to a deep dish, cover, and refrigerate for a minimum of 6 hours or overnight until set.
