Instructions

  1. In a stockpot over medium heat, warm oil and sauté onion, celery, garlic, carrots, and thyme for 4 to 6 minutes until onions are translucent.

  2. Stir in 2 tablespoons flour and cook for 30 to 45 seconds until lightly toasted.

  3. Gradually whisk in stock, bring to a boil, then reduce heat to medium-low. Add chicken and simmer covered for 20 to 30 minutes, stirring occasionally.

  4. While chicken cooks, combine flour, baking powder, soymilk powder, and salt for dumplings. Cut in margarine until mixture is crumbly.

  5. Whisk egg white (if using) with soymilk, then mix into the dry ingredients until just combined.

  6. Drop 2-tablespoon portions of batter into the simmering broth, cover, and add fresh parsley, salt, and pepper.

  7. Continue cooking covered for 20 to 25 minutes until chicken and dumplings are fully cooked.
