Instructions

  1. Preheat the oven to 325 F and lightly oil a 9x13-inch casserole dish.

  2. Place cubed bread in a mixing bowl.

  3. Heat olive oil in a skillet over medium heat, then cook onion, celery, and garlic until translucent.

  4. Combine eggs, broth, and seasonings with the bread cubes until moist, adding more liquid if necessary.

  5. Stir in the cooked vegetable mixture until evenly distributed.

  6. Press the stuffing into the prepared baking dish and dot the top with soy margarine.

  7. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 30-40 minutes, or until browned.

  8. Serve warm.
