Instructions

  1. Prepare a 9x5-inch loaf pan by lining it with lightly sprayed parchment or foil, ensuring an overhang on the long sides.

  2. Place vegan baking sticks, sugar, cocoa, vanilla, salt, and soy milk in a heatproof bowl over simmering water. Stir frequently, scraping down the bowl, until melted and smooth.

  3. Fold in chopped nuts, if desired, until just combined.

  4. Pour the mixture into the prepared loaf pan.

  5. Refrigerate the fudge for at least 2 hours until thoroughly chilled and firm.

  6. Remove the firm fudge from the pan using the liner handles, discard the liner, and cut into 1-inch squares. For cleaner slices, briefly freeze the fudge for 5-10 minutes before cutting.
