Instructions

  1. Heat almond milk and sugar in a saucepan over medium heat.

  2. Mix cornstarch with 2 tablespoons cold water.

  3. Slowly whisk the cornstarch mixture into the hot almond milk.

  4. Stir in salt and vanilla, then cook until thickened.

  5. Bring the mixture to a boil for 15 seconds, then remove from heat.

  6. Pour into a lightly oiled pudding mold or individual dishes.

  7. Cover with plastic wrap and refrigerate until set.

  8. For the fruit sauce, microwave fresh or frozen fruit until hot.

  9. Mash or sieve the fruit, then sweeten to taste.

  10. Serve the sauce over the chilled pudding.
