Daikon Soup

A warming and light soup, this recipe utilizes abundant daikon radishes for a simple, comforting meal.

Instructions

  1. Start boiling 1/2 cup water for the mushrooms.

  2. Pour boiling water over mushrooms in a bowl and soak for 15 minutes.

  3. Meanwhile, bring the broth to a simmer.

  4. Add thinly sliced daikon and celery to the simmering broth and cook for 5 minutes until vegetables are tender.

  5. Remove mushrooms from water, rub clean, roughly chop, and reserve the soaking liquid.

  6. Cut tofu into small cubes or thin slices.

  7. Add tofu and chopped mushrooms to the broth, carefully pouring in the reserved soaking liquid while leaving any grit behind.

  8. Simmer for 2 to 3 minutes until heated through.

  9. Divide soup into bowls and garnish with cilantro or green onions if desired.
