Daal Gosht (Lamb with Lentils)

Instructions

Heat oil in a deep pan over medium heat. Add cumin seeds and fry until they splutter.

Add onions; fry, stirring, until pale golden.

Stir in ginger and garlic pastes; fry for one minute.

Add coriander, cumin, turmeric, red chili, and garam masala; fry until oil separates from the masala, stirring frequently.

Incorporate tomatoes; fry for 2-3 minutes, stirring often.

Add lamb and salt; stir well and fry until browned.

Add lentils and 3 cups of water. Bring to a boil, then cover and simmer until lentils are soft, adding hot water as needed to maintain a thick consistency.

Stir in lime juice and garnish with coriander leaves.
