Daal Gosht (Lamb with Lentils)

Instructions

  1. Heat oil in a deep pan over medium heat. Add cumin seeds and fry until they splutter.

  2. Add onions; fry, stirring, until pale golden.

  3. Stir in ginger and garlic pastes; fry for one minute.

  4. Add coriander, cumin, turmeric, red chili, and garam masala; fry until oil separates from the masala, stirring frequently.

  5. Incorporate tomatoes; fry for 2-3 minutes, stirring often.

  6. Add lamb and salt; stir well and fry until browned.

  7. Add lentils and 3 cups of water. Bring to a boil, then cover and simmer until lentils are soft, adding hot water as needed to maintain a thick consistency.

  8. Stir in lime juice and garnish with coriander leaves.
