Instructions

  1. Preheat the oven to 350 F and prepare a 9x9-inch baking pan with butter or cooking spray.

  2. In a bowl, cream butter, sugar, and egg yolks with an electric mixer until light.

  3. Mix in liqueur (if using), orange zest, and salt.

  4. In a separate bowl, beat egg whites with cream of tartar until stiff.

  5. Fold beaten egg whites and flour alternately into the butter mixture.

  6. Transfer batter to the prepared pan, scatter blueberries over the top, and press them into the batter.

  7. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cut into 6 pieces and serve warm or cold, dusted with confectioners' sugar; add blueberry sauce if desired.
