Czech Roast Pork Loin (Veprova Pecene) Recipe

Preheat oven to 400°F.

Trim excess fat from the pork loin, then rub with salt and pepper.

Heat 3 tablespoons lard or oil in a large skillet and brown the seasoned pork on all sides.

Transfer browned pork to a roasting pan.

Sprinkle pork with 1 tablespoon marjoram, 2 tablespoons caraway seeds, 2 tablespoons parsley, and 1 cup water, then top with onion slices.

Roast for 1.5 to 2 hours, basting every 15-20 minutes, adding water as needed, and covering with foil if browning too quickly.

Remove cooked pork to a platter.

Skim fat from pan juices and season with salt and pepper.

Serve pork slices with dumplings and pan juices, alongside cabbage.
