Czech Roast Pork Loin (Veprova Pecene) Recipe

Instructions

  1. Preheat oven to 400°F.

  2. Trim excess fat from the pork loin, then rub with salt and pepper.

  3. Heat 3 tablespoons lard or oil in a large skillet and brown the seasoned pork on all sides.

  4. Transfer browned pork to a roasting pan.

  5. Sprinkle pork with 1 tablespoon marjoram, 2 tablespoons caraway seeds, 2 tablespoons parsley, and 1 cup water, then top with onion slices.

  6. Roast for 1.5 to 2 hours, basting every 15-20 minutes, adding water as needed, and covering with foil if browning too quickly.

  7. Remove cooked pork to a platter.

  8. Skim fat from pan juices and season with salt and pepper.

  9. Serve pork slices with dumplings and pan juices, alongside cabbage.
