Czech Potato Dumplings

Czech potato dumplings, or bramborove knedliky ze studenych brambor, are prepared from cold mashed potatoes combined with eggs, salt, and flour, then boiled and served with a buttered breadcrumb coating.

Instructions

  1. Start boiling a large saucepan of water.

  2. In a large bowl, thoroughly combine mashed potatoes, eggs, and salt, then add flour until a stiff dough forms.

  3. With floured hands, shape the dough into 1 1/2-inch balls.

  4. Cook 10 dumplings at a time in the boiling water for about 12 minutes, or until they rise to the surface and are cooked through.

  5. Drain the cooked dumplings.

  6. Separately, in a medium skillet, cook butter with breadcrumbs until golden brown and crisp.

  7. Roll the drained dumplings in the buttered breadcrumb mixture and serve immediately.
