Czech Pirouette Cookies (Parizske Pecivo)

Crisp Czech Parisian cookies, also known as rolled wafer cookies or pirouettes, are delicate treats perfect for any occasion.

Instructions

  1. Preheat the oven to 425 F.

  2. In a large bowl, cream butter and confectioners' sugar until light and fluffy.

  3. Add flour, egg whites, and vanilla extract; blend until thoroughly combined.

  4. Spray a sheet pan, then spoon 1 1/2 teaspoons of batter into four 4x3-inch ovals.

  5. Bake for 3 minutes or until the edges are golden.

  6. Quickly loosen each cookie with a metal spatula and roll it lengthwise around a wooden spoon handle.

  7. Remove rolled cookies from the spoon handle and cool them on a wire rack.

  8. Repeat the baking and rolling process with all remaining batter, briefly rewarming brittle cookies in the oven if necessary.
