Custard Rice Pudding
A baked, custard-like rice pudding features milk, eggs, vanilla, lemon zest, raisins, and nutmeg.

Instructions

Preheat the oven to 300 F and butter a shallow 1 1/2- to 2-quart baking dish.

Combine all ingredients except nutmeg in a large bowl and stir.

Pour the mixture into the prepared dish, sprinkle with nutmeg, then place it in a larger pan with 1 inch of hot water.

Bake for about 1 1/2 hours until set; a clean knife inserted into the center should come out clean.

Serve warm, or chill and serve cold, optionally topped with whipped cream.
