Instructions

  1. Preheat the oven to 425 F (220 C) and line a baking sheet with parchment paper.

  2. Clean and cut the cauliflower into small to medium, similarly-sized florets.

  3. On the baking sheet, toss the florets with olive oil, 1 teaspoon of curry powder (adjust for taste), and a generous pinch of salt.

  4. Roast for 20 to 30 minutes, turning a few times, until the cauliflower is tender and caramelized.
